Used on event: Vino Valencia: the wine night, on Wednesday, March 23rd @ Café Xaloc, Ruzafa!

The variety used is 100% Merlot; this wine has been ageing in conical wooden oak.

Vino Valencia Tasting Notes

Appearance: plum red, long legs.
Nose: red and black fruit.
Palate: Jam, smooth tannins.
Café Xaloc food thoughts:Toast Bread with goat cheeds and fig jam.

    Appearance:Nice deep plum red with long legs. Young appearance which coats the glass.
    Nose: On the nose jam, red and black fruit and hints of the 14 months in wood.

    Palate:On the palate good ripe jam flavours and smooth tannins. None of the slightly bitter finish Merlot can sometimes produce in the mediterranean, this is lovely!

    For me this is a wine which is still young and needs a year more in bottle. An hours decanting and aeration opens it up to give a rich fruity red which will repay 5-10 years keeping! First monovarietal from this excellent young bodega…..limited availabilty so buy it now!!!!
