Englishman Philip Diment and his Spanish wife, Ana del Castillo, set up the UK’s first ever tapas restaurant in the 1970s (everyone knows “Don Felipe” near Waterloo in London). While the restaurants flourished, Philip had a yearning to make wine by the Mediterranean.

He bought the dilapidated Casa del Pinar winery in Venta del Moro (DO Utiel-Requena), and the couple set about turning it into an elegant “casa rural” and a prize-winning bodega. The bodega retains most of the original structure, but now with a stainless steel temperature-controlled tank, on very long legs to Philip’s own specification, in order to allow barrels to fit under it. There are rows of oak barrels, again with a simple temperature-control mechanism operated by steel plates – also adjustable through a mechanism of Philip’s own design.

This combination of imaginative intelligence and commitment to quality has resulted in three wines (the white Verderón, our friend Sanfir, and the bodega’s premium red Casa del Pinar reserva) that won awards in every wine competition in which they participated.
