Harvested at the optimum point of maturing of the grapes for greater freshness and aromas in wine. Carried out by hand and first thing in the morning, allowing maximum respect for the quality and integrity of the fruit.

The bunches are transported directly to the pneumatic press where it undergoes a long and soft pressing. After the clarification process, the wine is shared equally in French oak barrels (which provide the structure and complexity) and stainless steel tanks for the alcoholic fermentation at a controlled temperature of 15-18 degrees. Then, this rosé will persist for six months in a tank and undergoes a “bâtonnage” (bâtonnage is the French term for stirring the settled lees back into the wine) weekly to get more volume and a silky effect in the mouth.

Vino Valencia Tasting Notes

Appearance: beautiful bottle, wine has salmon pink color
Nose: toasty, smokey, butter
Palate: first impression is that it is sparkling in the mouth and then the many tastes come through: wood, butter, toast, strawberry, cherry (perhaps?), spicy, nice acidity
Alter Ego food thoughts: chicken nugget on goat cheese with mustard honey sauce

    Appearance: More remeniscent of French onion skin roses from Provence, clean and bright.
    Nose: The fruit in this comes over strongly, almost sweet and aromatic.

    Palate: In the mouth generous white and red fruits, redcurrants, starts with a prickle reminding me of vinos de aguja. Long persistent finish and good for seafood and paellas.

    Appearance: A very light pink ( the lightest Rose I think I ever seen)
    Nose: quite fruity
    Palate: very fruity with a tough of citrus.

    This was a very nice wine, I wand both pleased and suprised by the flavor, not the normal rose that one sees. I think it is a little high priced for a Rose. Very nice presentation in the bottle.
