Used on event: June 16th Vino Valencia Wine Night at Babalú.

Elaborated following the traditional method and afterwards aged in contact with lees during 19 months.
Grape varieties used are 80% Macabeo and 20% Chardonnay; the Cava has got an ample and good aftertaste and the ideal serving temperature is 6ºC.

Sybarus Cava Brut Nature has been commended as World Wine Decanter 2008.

Vino Valencia Tasting Notes

Appearance: Yellow, gold.
Nose: almond, honey, vanilla.
Palate: dry with some aromatic hints, tiny bubbles, soft acidity.
Babalú food thoughts: Anchovy Canapé.

    Appearance: Pale yellow,golden hues,light bubbles
    Nose: Fresh fruity and herby with toasted bread.
    Palate: Fresh, good attack, becoming smooth with creamy long finish.

    First tasted at the December cava fair, this is a nice wine and good value!
